Cesca Daniele blends biodynamic mastery with the historical revival of Monferrato’s heritage. By focusing exclusively on the rare, indigenous Slarina grape, the estate delivers a pure, vibrant expression of the land. We don’t just make wine; we bottle the raw, honest character of the vineyard.

After years of refining his craft alongside global biodynamic masters, Daniele Cesca returned to the land with a clear commitment: let the soil speak without the noise of synthetic chemicals or excessive sulfites.

To preserve this absolute purity, we completely exclude oak from our cellar. By avoiding wood aging, the unique energy of the hill remains unmasked, leaving the vibrant balsamic and genuine fruit aromas of the Slarina grape completely intact.

Perched at 305 meters above sea level in the heart of Moncalvo, our vineyards thrive on the 'Sands of Asti'—a rare Pliocene formation left by the ancient 'Mare Padano'. One historic hill, three distinct micro-terroirs:

 

The Base (Sandy-Clay): High-permeability yellow sands that allow roots to plunge deep, yielding refined structure and intense aromatics.

 

The Mid-Slope (Marl & Sandstone): Well-drained soils that highlight the grape's natural resilience and deep, balsamic soul.

 

The Summit (Fossil-Rich): A dense concentration of Glycymeris insubrica fossil shells that pushes the vines to their limit, creating extreme mineral tension.

BALSAMINA: The rebellious grape

Historically known in our village as Balsamina, Slarina is a rare, native Piedmontese variety that nearly vanished during the 1900s due to low yields that made it unfit for industrial winemaking. Today, we stand as its few dedicated guardians. Thanks to elongated, loose clusters that resist disease naturally and thick skins that ensure a slow ripening, Slarina translates the raw energy of the Capuchin Hills directly into the glass.

Our winemaking process naturally extends to the canvas. Daniele Cesca personally hand-draws every single label on natural recycled paper, portraying his own grandparents. This intimate tribute seamlessly connects the unique personality of each wine to our family roots and legacy.

BOLLA RINA – Limited Edition (Sparkling Slarina Rosé)

Grape Variety: 100% Slarina

 

Terroir: Pliocene sands at 265m ASL.

 

Winemaking: Spontaneous fermentation, 8 days of skin contact.

Bottled with native must, aged 17 months on the lees.

Pas Dosé (Disgorged April 2025).

 

Specs: Alcohol: 12% vol. | Production: 1,400 bottles.

 

Sensory Note: Electric pink grapefruit and a distinct saline minerality.

 

2. RINA STILL (Slarina Rosé)

Grape Variety: 100% Slarina

 

Terroir: Pliocene sands at 265m ASL.

 

Winemaking: Spontaneous fermentation without skins;

aged 7 months in stainless steel to preserve the raw fruit energy.

 

Specs: Alcohol: 10.5% vol. | Sulfites: <25 mg/L | Production: 2,000 bottles.

 

Sensory Note: Light profile with high acidity, intense pink grapefruit notes,

and a crisp, electric finish.

 

3. NONNA RINA (Red Wine)

Grape Variety: 100% Slarina

 

Terroir: Sandy-silty-clay soils. A blend of all three micro-terroirs on the hill.

 

Winemaking: 12 days of maceration in steel; zero oak to protect

the honest character of the fruit.

 

Specs: Alcohol: 14% vol. | Sulfites: <25 mg/L | Production: 1,500 bottles.

 

Sensory Note: Sophisticated feminine elegance featuring

bright cherry notes and a deep, balsamic finish.

 

4. NONNO ALDO (Red Wine)

Grape Variety: 100% Slarina

 

Terroir: Exclusive selection from the highest plots,

characterized by pure Pliocene fossil sands.

 

Winemaking: 10 days of maceration; refined purely

in steel to emphasize high-altitude mineral tension and precision.

 

Specs: Alcohol: 13% vol. | Sulfites: <25 mg/L | Production: 1,500 bottles.

 

Sensory Note: A deep and contemplative profile highlighting complex

balsamic undertones and wild mountain herbs.

 

5. LA NONNA – Limited Edition (Red Wine)

Grape Variety: 100% Slarina

 

Terroir: Sourced from vineyards on the Capuchin Hill with

the highest exposures.

 

Winemaking: 12 days of maceration in steel to maintain the

natural verticality and crunchy fruit profiles.

 

Specs: Alcohol: 12% vol. | Sulfites: <25 mg/L | Production: 4,000 bottles.

 

Sensory Note: Dynamic and bright with notes of red currant,

wild pepper, and a signature balsamic lift.
